HMT: Day 50

Ladies and Gentlemen, I got pulled over and it sucked.

So I get done work around midnight and begin the commute back home, 2 miles in I’m headed down a hill where the speed limit goes from 40 to 25 in a split second and BOOM hello blue lights.

Insert curse words here.

I pull over and a surprisingly handsome young cop walks up to my window asking me how I am and if I know why I have been pulled over.  “Uh I’m gonna be real honest sir, I’ve been better.”

Once we had established that yes, I was speeding but no, I did not realize how quickly the speed limit changed, he asked me for my license and registration… here is the kicker folks, I’m still rocking a Tennessee license and registration.  Two things that Mr. Handsome Cop was immediately thrown off by.  How thrown off you ask?

“You know what you keep the insurance, I’m just going to run this license and make sure we don’t have any warrants on our hands.”

You wanna know what I was thinking about in the 5 minutes it took to run my information through?

Do I have any warrants for my arrest? (No, I don’t)

Would I have a warrant if I forgot to return a book to the public library in Knoxville? (I will be returning that btw)

I wonder if Mr. Handsome Cop is married or engaged, he looks like he’d be settled down.

Do people actually flirt with cops when they get pulled over? How does that even start?

Jenna Marbles should make a video about getting pulled over.

Who thinks of that stuff???? Me. Only me.

Mr. Handsome Cop then returned to the window, handed me a written warning and just like that I wanted to hug him, scream and dance in the middle of the road… I refrained for obvious reasons. So thank you Mr. Handsome Cop, scouts honor I won’t do it again;)

My life is so exciting.

Anyway,  today I went to the mall in search of shorts at The Loft (got a pair that I will share with you guys tomorrow) but I also found this adorable dress that I instantly fell in love with from Francesca’s.  It was on sale and everything but as I’m currently rocking a body a few sizes bigger than I have been in the past I just didn’t feel comfortable enough in it to buy it.

Disclaimer:  I LOVE Francesca’s though, I think I own 10 dresses as well as a bunch of belts and jewelry so believe me when I say I  am so happy Burlington got one.  I will be back in and trying many more dresses on I think today was more mental than physical but I’ll let you guys be the judge of it!

I loved that this dress was green and lace first off but then I really came around to the blue underneath and just thought it was such a cool touch.  I loved that it could be dressed up or down and the cut was one that could be worn for so many different occasions.   Unfortunately the length was my biggest hang up, I’ve never been one to carry weight in my stomach (definitely not in my chest haha) but instead to my backside and thighs, so even if I try the next size up I often find that it adds fabric to my upper half  but not where I actually need it.

It doesn’t look terribly short but it sadly failed my sit down comfortably test… man did I love it though, just have to tell myself if it is meant to be it will happen;)

Trying on clothes all morning gave me a lot of motivation to hit the pavement and get a few miles in so that is what I did.

My 365 Project: Week Four

Week 4

May 22nd – 28th

May 22: We had some Korean guests in who gave me these as a present. Calories don’t count if you can’t read them right?

May 23: This is evidence of being sick and glued to a chair all day… it wasn’t pretty, you are lucky I’m covering my face.

May 26: My first trip to the Magic Hat Brewery! I am gonna be real honest with you folks, we did not actually tour but instead tasted free samples and bought growlers… I will make it back for an official tour someday soon though!

May 27: Vermont City Marathon starting line as taken from a friend’s patio. Not a bad view huh?

May 28: This bowl was once overflowing with watermelon… I have a serious obsession.

I can’t believe week 4 is already in the books, time flies;)

HMT: Day 48

Hello friends!

I hope everyone had a lovely holiday weekend, mine was filled with friends, food, and working… don’t go in to the hospitality industry if you like your holidays;)  Yesterday was the Vermont City Marathon and although I did not run in it this year I am so very proud of all of the people I know who did it.  I wish I could have participated, mark my words I WILL PARTICIPATE NEXT YEAR!  Seeing all of the posts on facebook and reading the articles in the newspapers I just can’t explain my excitement for my own race in July.  I know I’ve said all of that before but man I am pumped!

I decided that I was cool enough to have a running buddy (i.e. someone who will show up at my doorstep and make me go running/work out in general) so today was our first day chasing pavements together… YAY KARI HAS REAL FRIENDS!  I would say it was a success, I know I pushed myself even though it was just an easy 2 mile run.

Day: 48

Distance: 2 miles

Time: 22 minutes/11 min/mi

Temperature: It was mid 70s with a 15 second down pour… I’m telling you VT weather is odd.

Injuries: I was tight in my calves for some reason but no real problems.

After we ran we did a 15 minute ab workout that Anthony says he does with his baseball team.  I asked him where they got it from and he didn’t even flinch when he replied “Jane Fonda and she is not a nice woman.” I immediately burst into tears laughing so hard as I pictured the entire UNC Charlotte club baseball team working out in front of a Jane Fonda ab video… picture it, you know you want to. When we finished I totally agreed, she may seem sweet but that work out was deadly.

Strawberry Cupcakes with White Chocolate Buttercream Frosting

Today is the kick off to Memorial Day weekend and it should be a great one!  In celebrating we are having some friends over to have a little BBQ and obviously cupcakes were requested.

I wanted to do something pretty light and summery so I went with a vanilla strawberry cupcake with my favorite white chocolate buttercream frosting, normally I would have busted out my actual vanilla cake recipe but I was insanely strapped for time so Duncan Hines had to do the trick for the base (judge me as necessary haha)

Strawberry Cupcakes with White Chocolate Buttercream Frosting

1 box vanilla cake (and the necessary fixings, water, vegetable oil and eggs)

1.5 C. diced strawberries

3 C. powdered sugar, sifted

1 C. unsalted butter, softened

6 oz white chocolate (not melts or chips-the frosting doesn’t really take to those in my experience)

1 tsp vanilla extract

1/4 C. heavy whipping cream

12 strawberries halved for decoration

1. Preheat the oven to 350 degrees, make the cake mix as directed on the box.  When the mix is smooth add the diced strawberries and mix well but be careful to keep the strawberries intact.  Fill the cupcake tins 2/3 full with the batter and bake for 15-20 minutes (mine needed about 17 minutes).  When finished remove the cupcakes and let stand for about 15 minutes before removing from the pans.

2.  To make the frosting, first place the white chocolate in a microwave safe bowl and microwave at 30 second intervals until you can stir it without lumps.  You could use the double boiler method if you want to, totally up to you.  Set the white chocolate aside to cool.

3.  Sift 3 cups of powdered sugar into a large mixing bowl.  Soften the butter (again I used the microwave) and add to the powdered sugar.  Once combined, mix with your electric mixer until light and fluffy.  Fold the whipping cream and vanilla into the mixture then add the white chocolate to the frosting.

4.  Mix the frosting until it looks like frosting… haha I don’t know how else to say that.  Thicker is better so add powdered sugar about a half a cup at at a time as you need to.  Make sure you let it cool before adding to the cupcakes. Add half a strawberry on top and place in the fridge, how long you keep them in the fridge is really just dependent on the weather and where you may be transporting them.

WARNING: I did not let the frosting cool enough and in this humid Vermont weather it melted when I put it on the cupcakes more than I would have liked it to.

Don’t get me wrong, they still tasted delicious and as it was a family BBQ nobody is really gonna care that some of the frosting was lost on the sides;)

So the frosting didn’t completely fall off obviously but had to let you know it was not the consistency I was hoping for!

HMT: Day 45

Day: 45

Distance: 1 mile

Time: 10 minutes

Temperature: 70s and lovely!

Injuries: None

Yesterday I did a quick mile just to get some running legs going it was a beautiful morning and after being sicker than a dog I was happy to be functional.   I also did an hour of yoga because I was pretty certain I would be sore today (I was right).  Tonight is 4 miles and tomorrow is 2 miles, I’m starting to get a little anxious about the race afraid I won’t have done enough come race day.  This weekend is the Vermont City Marathon and after completing the half twice, I am majorly jealous of all those running in it.  It makes me excited to run my race in July! To all those running in the VCM, good luck and may the weather be on your side:)

Anyway yesterday afternoon the boy and I went for a quick lunch on Church Street at Ri Ra’s and then walked along the waterfront for 3 miles, it was a great day!

HMT: Day 44

Day: 44

Distance: 4 miles

Time: 48 minutes/ 12min/mi

Temperature: Warm, VT weather has been so nice lately!

Injuries: Feelin’ good despite the week lapse between runs.

Confession: I SUCK at being sick.

I’ve been sick since Sunday… starting with a sore throat, Monday gained the runny nose, Tuesday the congestion, which brings us to today Wednesday, my first day off and I haven’t left the couch since I woke up this morning at 9.

I don’t like to have people around me when I’m sick, I would much rather be pathetic solo. I also am horribly stubborn about going to the doctor so lets just throw that one out of the window.

I have had LOTS of time to think about how productive I will be when I get off this couch and here it goes:

1. I will eat more fruits and veggies.

2. I will do yoga daily.

3. I will run 6 miles by Sunday.

4. I will start reading a book.

5. I will not eat out more than one time this week.

In the meantime it will be just me,  the couch, many cups of tea, my good friend Gibbs (NCIS reference naturally) and an intense love affair with my Tylenol Daytime Cold Medicine.

My 2012 Summer Bucket List

I have made a summer bucket list, I tried to make it as inexpensive but oh so fun as possible and this is what I’ve come up with!

Drum roll please…

1. Save enough money by August to move and be comfortable for a couple months (I have a number in mind).

2. Actually craft things off of pinterest.

3. Rock a “bro” tank.

4. Water ski.

5. Cliff jump.

6. Throw a big themed party with my friends!

7. Attend the Brew Festival.

8. Attend the free concerts at the Waterfront.

9. Shop in thrift stores.

10. Hike Mount Mansfield.

11. Build and Paint a corn hole set.

12. Learn how to “Wobble”

13. Take sunrise yoga classes.

14. Go to the drive ins.

15. Go on a wine tasting tour.

16. Ride the Alpine Slide.

17. Go Zip Lining.

18. Rock Climb.

19. Get a ballin’ tan.

20. Read a children’s book series.

21. Build a fort out of blankets.

22. Stay barefoot all day.

23. Take a picture with champ at a baseball game.

24. Eat a “big duker” creemee from Duke’s.

25. Party on a rooftop.

26. Play kickball with friends.

27. Maintain better sleep patterns, this is hard for me.

28. Learn how to use a grill.

30. Learn how to side braid my own hair.

34. Make a sand castle.

35. Have a water balloon fight.

Here is the folder that I made with all of the things on the list glued inside. The plan is to collect the ticket stubs, brochures, basically anything I pick up doing each item on the list I could put in this folder and then one day make a scrapbook about it.  Or I just wanted a project to occupy my time while watching Criminal Minds… the jury is still out;)

Sweet, sweet, summer time!

Oh my goodness, oh my goodness, it is officially summer time!

My friends are home, work is crazy and the weather is beautiful… couldn’t be happier:)

I have a run post for tomorrow AND a post about my summer bucket list but today I’m just quickly writing about the delicious dinner I had with the boy yesterday.

We went to One Federal, a really cute favorite spot of the locals in St. Albans.  A place we normally only go to on Thursdays for “Switchback Thursdays” as Dave’s friends have coined it, but yesterday we actually ate there and I must say it was fantastic.

I mean how cute is this place?

One, I still can’t tell you how much I appreciate the different people in Vermont… quirky, friendly, hippie, eclectic…

I basically think if you know a Vermonter you’re doing well for yourself;)  

What makes me say this is that I thought our adorable waitress was awesome, the kind of waitress who checks on you but doesn’t over do it at all, the kind of waitress who rocks auburn hair with huge turquoise earrings, I loved it.

Two, I can’t tell you how much I miss certain parts of the south… the friends, the accents (I still say ya’ll) and of course the Vols…

So I ordered a drink called a “Southern Peach” and it was fabulous… the menu said in small print at the bottom “two drinks per customer” and I completely understand why… I felt it walking away from the table and I like to think I hold my liquor well.

Three, I still have extreme vegetarian tendencies… though I now eat meat I still feel weird sometimes and cooking it is virtually out of the question, so when I look at a menu I tend to go with a veggie option.

I got this portobello pesto panini and it was good, a little too burnt for my taste but it really was good, the filling was delicious! Everything on the menu looked great, to start I had a salad with “maple balsamic vinaigrette… so good! Vermonters do maple well;)

Four, I am obsessed with dresses… I don’t know how to wear anything but… it works in the south, it works a little less back up here but I’m making it work, one day at a time.

So that was my lovely Friday evening, bring on more just like it this summer!

My Parent’s 37th Anniversary

I didn’t run today, maybe I will later but as it stands I did an hour of yoga and that feels good enough to be considered training.

I did decide at midnight last night that I needed to make my first ever batch of no-bake cookies… uh why did nobody tell me they were the easiest things in the entire world to make? I feel like my life has not even made sense til now.

I WAS DONE IN 10 MINUTES!

And now I have all of these delicious cookies to stare at while I try to eat healthy… bullocks.

Anyway, today is a very exciting day in this household, today is my parent’s 37th Wedding Anniversary!

And the crowd goes willllllddddddddd………..

Yupp these two crazy kids met because my dad had the hiccups and my mom shoved a lemon in his mouth, 6 months later were married, yes they have been married for 37 years after only knowing each other for 6 months, CRAZY!

They have stayed together after creating 4 of the craziest, messiest, humbled (see the sign above our heads) kids known to man.
